Juice of 1 lime
Extra kicken' chicken seasoning
Lettuce
Tomato slices
Butterfly chicken and sprinkle generously with seasoning. Cook in pan with olive oil until fully cooked. To make sauce, mix mayo, lime juice, and seasoning. Spread on toasted bread. Just like a gourmet sandwich!

Fruit Pizza
1 roll refrigerated sugar cookie dough
1 bar cream cheese, softened
1 7 oz. jar marshmallow cream
1 tsp vanilla
1/2 c. powdered sugar
Fruit, such as strawberries, blueberries, mandarine oranges, kiwi, raspberries, etc...
Slice sugar cookie dough into half inch slices. Make a big cookie on baking pan, use rolling pin to roll it evenly. I used parchment paper under mine to keep from sticking. Bake at 350 degrees until almost done. Take out of oven and let cool.
Beat softened cream cheese, vanilla, powdered sugar, and marshmallow cream together in bowl. Spread on cooled cookie. Decorate with fruit. Refrigerate until ready to eat.

Acorn Cupcake Topper
To make acorns: Use square caramel pieces. Work in batches of about 4-5 at a time. Put 4 caramel pieces on plate and microwave for about 10 seconds, just enough where they are moldable. Shape into an egg. Dip top half into melted chocolate then into chocolate sprinkles. Set on wax paper to set and then into freezer for a few minutes until chocolate has hardened. Top on cupcake.
Mustache Cupcakes
To make mustache toppers just melt chocolate chips in double broiler until smooth. On a tray, put wax paper down with mustache pictures underneath. Pipe chocolate on outlines then put tray immediately into freezer to set. After about 10 minutes, take out and carefully peel off mustaches to top cupcakes.

Alfredo's Guacamole
4 avacodos
3 T olive oil
2 tomatoes
1 medium onion, finely chopped
3 jalapenos
1/2 c. Nopalitos (bottled cactus, found in hispanic aisle)
1/2 bunch cilantro
2 limes
2 tsp white vinegar
Salt
Cut avacodos in half. Spoon out avacodos into bowl and mash with olive oil. Dice tomatoes, onion, and jalapenos. Add to bowl. Rinse, drain, and chop nopalitos and add to mixture. Add white vinegar and lime juice. Add salt and cilantro. Stir all ingredients together. Serve with tortilla chips.
