Cauliflower Cheesy "Bread"

This will make 2 cheesy breads or one really big one.

1 head cauliflower
4 eggs
2 cups cheese, I used TexMex or you could use mozzarella
fresh rosemary, salt, pepper, garlic salt
fresh mozzarella slices
marinara sauce

Cut cauliflower florets off head then boil for 10 minutes. Mash the cauliflower, either using a fork, food processor, or ricer. Beat in eggs, 2 cups cheese, and spices. Cover 2 pans with parchment paper. Spread mixture on pan pretty thin. Bake at 400 degrees for about 25-30 minutes until crispy and brown. Take out of oven and lay fresh mozzarella slices. Bake for 5 more minutes. Serve with marinara sauce.

We ate one and are using the other for a BBQ chicken pizza tomorrow night.

Brownie Ice Cream Dessert

1 box brownie mix (eggs, oil, and water for brownies)
vanilla ice cream
1 jar hot fudge
1 jar salted caramel
1 container Cool Whip
6 Twix bars, chopped into pieces

Take ice cream out of freezer to soften. Make brownies in 9 x 13 pan and bake. Let cool completely. Spread softened ice cream on top of brownies, then drizzle with hot fudge and caramel. Put pan in freezer for an hour. Once somewhat hard, spread Cool Whip on top then top with crumbled Twix bar or whatever candy bar you like.
