Crockpot Meatballs

1 1/2 lb. ground beef
1/2 c. bread crumbs
1/4 c. parmesan cheese
1/2 onion, chopped finely
garlic powder, salt, pepper
1 egg
3/4 c. milk

Mix all ingredients in bowl and mix with hands. In pan, heat some olive oil and sear each meatball on each side. Put in crockpot when done. I had to do mine in batches. Then add sauce on top.

Sauce:
Jar tomato sauce or favorite spaghetti sauce
lots of cherry tomatoes, sliced in half
jar of mushrooms, drained

After you sear all meatballs in pan, add cherry tomatoes and cook for a few minutes. Transfer on top on meatballs in crockpot and add mushrooms also. Add sauce. Cook on low for 3-4 hours. You can serve with pasta, spaghetti squash, or just by themselves.

Beef and Bell Peppers

2 lbs stew meat
1 onion, chopped
3 bell peppers; yellow, red, orange, chopped
4 cloves garlic, minced
3 cups water
3 beef bullion cubes
2 T Sriracha sauce (more if you like it spicy)
salt, pepper, onion powder
2 T corn starch + 1 T water for thickening
Brown or white rice

You can cook this in the crockpot or if you are short on time, in a roasting pan. Boil water and put in bullion cubes to dissolve. Stir in Sriracha sauce and seasonings. Put meat, onion, bell peppers, and garlic in crockpot or pan. Pour sauce over and cook. If using crockpot, cook on LOW for 6-8 hours or if using pan, cook with top on roasting pan for an hour on 400 degrees. At end, dissolve corn starch in water and stir in to thicken. Let cook for another 5-10 minutes. Serve over cooked rice.

White Chicken Chili

Serve this up with some good cornbread and you have the perfect cold night meal!

1 rotisserie chicken (shredded) or 4 shredded cooked chicken breasts
*Time Saving Tip- I buy 3-4 rotisserie chickens at Costco (can't beat $5 for HUGE          chickens), shred them when I get home, then freeze in baggies. So easy when you

1 32 oz. chicken broth
2 tsp cumin
8 oz Pepper Jack cheese, cubed

Put all ingredients into crockpot. Cook on High for 3 hours or Low for 5-6 hours. This is a bit spicy, but very good!

Italian Beef Sandwiches

beef pot roast
1 thinly sliced onion
jar of pepperoccinis
2 c. beef broth
2 T Italian Seasoning

hogie rolls
provolone cheese slices

Put all in crock pot. Cook all day in crock pot on low for about 8-9 hours. Shred beef using 2 forks.
Open rolls when ready to assemble. Pile on the beef, onion, and pepperoccinis on one side.  Place a slice or 2 of cheese over beef to let it melt in oven. Place in oven just until cheese melts and other side of bread is toasty. You can dip it in the juices when you eat if you want like a french dip. That's the yummy way!

1 can black beans, drained
1/2 block cream cheese
tortillas
taco fixings

Mix up chicken breasts, taco seasoning, salsa, corn, and beans in crockpot. Cook on LOW for 7-8 hours. About 20 minutes before you eat, mix in cream cheese or until all cheese is melted in crockpot. Shred chicken and stir before serving on tortillas.

Italian Stuffed Bell Peppers

Sorry the picture is sideways! Can't turn it! You get the picture though! :)

I like to double the meat mixture and freeze it so that when I want to make it again, all I have to do is buy the bell peppers.

4 bell peppers- your favorite color!
1 lb. ground beef
2 cloves garlic, minced
1/2 onion, chopped
2 c. shredded mozzerella cheese
12 cherry tomatoes, halved
2 T parsley, minced
salt and pepper to taste
1 c. beef broth
1 can stewed or diced tomatoes

Cut top off of each pepper and dig out the insides and seeds until hollow. Brown ground beef in skillet until no longer pink. Drain grease. In big bowl, add and stir together ground beef, onion, garlic, mozzerella cheese, tomatoes, parsley, and salt and pepper to taste. Fill each bell pepper with meat mixture. Place bell peppers down in crockpot. Pour beef broth and then tomatoes over bell peppers. Let cook on LOW for 5 hours.

Crockpot Roast

Not only will this melt in your mouth, your house will be smelling so tasteful! Serve some lightly toasted sourdough bread on the bottom of your plate and let it soak in all the delicious gravy with your tender roast and vegetables. Mmmm!!

2 -3 lb. beef rump roast
2 T olive oil
3 large garlic cloves, peeled and quartered
2 slices bacon, cut into small pieces
1/2 c. water
1 can cream of mushroom
1 envelope onion soup mix
1/2 tsp each salt and pepper
1 c. pearl onions, peeled
1 1/2 c. baby carrots
4 large red potatoes, washed, peeled, quartered
1 c. sliced fresh mushrooms
1 c. red wine

Heat olive oil in skillet on med. high heat. Sear roast on all sides until browned. Take roast out of skillet and cut 1 inch slits in roast all over. Stuff each slit with bacon and garlic pieces. Place roast in crockpot. Pour in water and cream of mushroom. Sprinkle onion soup mix all over. Add salt and pepper. Add vegetables and pour red wine on top of everything. Put top on crockpot and turn on LOW for about 8-9 hours. **If you like your gravy a little thicker like I do, try this: Mix 1 tsp corn starch and 1 T water together in small bowl then add it to the crockpot about 20-30 minutes before eating. Put the top back on the crockpot and let it thicken up for a little while. This is great served over thick pieces of french or sourdough bread. The bread soaks up all the rich gravy flavor. You can adjust amounts according to how many people will be eating.
