This comes together pretty quick and is very low carb too!
1 lb. fresh or frozen shrimp, thawed and peeled
3 zucchini
Olive oil
4 cloves garlic, minced
Red pepper flakes
2 T butter
Salt and pepper
1\2 c. White wine
Juice of 1 lemon
Fresh herbs if you have them ( basil and parsley)
Parmesan cheese
Using a mandolin with the julienne blade, shred zucchini into small noodles.
Coat pan with olive oil. Heat garlic and red pepper flakes in pan for a minute or two. Add shrimp and cook until pink, adding a little butter too! Remove shrimp with slotted spoon, leaving yummy drippings. Add a little white wine and lemon juice as you scrape the pan. Let that do it's thing for a few minutes. Add in zucchini noodles and cook for about 2-3 minutes. Add shrimp back in along with herbs. Top with parmesan cheese.
