1 pkg Oreos
1/4 c. unsalted butter, melted
1 jar marshmallow cream
1 container cool whip
1/4 c. milk
1/2 tsp peppermint extract
green food coloring
Grind Oreos in food processor until fine. (Save some crushed Oreos to sprinkle on top.) Stir in butter and press into a pie pan. In bowl, fold together marshmallow cream, cool whip, milk, and extract. (You can microwave marshmallow cream for a few seconds so it's easier to work with.) Add a few drops of food coloring until desired color. Put mixture on top of Oreo crust. Sprinkle with Oreo topping. Freeze until ready to serve.

Chicken Salad
1 rotisserie chicken, shredded and chopped (I like dark meat. Use breasts if you just like white meat.)
1 apple, peeled and diced OR grapes, halved
2 stalks celery, finely chopped
1 c. chopped pecans or slivered almonds
1/2 c. dried cranberries
~1/2 c. mayo
~1/2 c. plain green yogurt
salt and pepper
lemon juice
Mix all ingredients together. Eye the mayo and greek yogurt when putting it in. Start with a little and add more as needed to reach desired creaminess. You can serve on croissants, bread, in a wrap, or just eat with crackers.
